I'm sure you'll find each profession has its advocates, but for me it's fixer all the way.
Given that no-one has more fun than a fixer, I can also fess up to enjoying one or two other professions.
First up is the crat. Being able to hang out with many and varied different mobs and have them do your bidding is way cool. As is being able to face a whole room full of cantankerous mobs and forcefully inist that they just chill out while you walk right past them. Managing a pet and two charmed mobs at once is certainly difficult, but that in itself is the fun for many.
Next up for me is the agent. A lot of fun can be had sneaking around invisibly with the power to take down an enemy with a single shot. Especially on the battle stations. Best suited for those who enjoy camping.
Finally I'll give a mention to the enforcer. Sometimes a theraputic hours mindless thuggery just hits the spot, and for that, the enforcer is your weapon of choice.

My favorite profession is Meta-Physicist, it is a complex prof with viability in all areas of AO, constant action and attention by the player, and you can twink several factors on your MP to much effect.
The most fun professions for me though are agent, fixer, and shade.
Agent has massive versatility, and the different FP's can be used in many situations to push your ability beyond other profs. I also enjoy being able to sneak in pvp settings and choose when I want to act, the sense of control is very nice.
Fixer is fun in pvm for me with HoTs rather than active healing, high def, and good kiting ability. I can take on very strong mobs if I put some effort into staying moving  PvP having the highest def (CC resistance + aad) I rarely feel held down or backed into a corner on my fixer. Even NT's are not so bad as I can generally run away before they can kill me (tl5).
Shade is just massive damage, constant action with perking, and the difficulty of timing your healing alongside mob damage. I like already being an incredible DD often equal to the team I am with because of a little bit of effort put into my setup.
Professions that are not fun for me now are soldiers, keepers, and in some cases enforcer.
Soldier is boring and fairly easy, I deleted my tl5 which is the only tl5 I ever got rid of, but it was simply a waste of a slot without much variation or challenge in the profession.
Keeper is almost a self ran profession for me, and without high damage perks and specials or some constant action I have to maintain it was a q /follow /afk prof for me.
Enforcer has its really fun moments, but I find the profession too slow in pvm, I am out of raiding that I need for my enf, and when I do most raiding it is usually without much challenge. It is a highly useful and desireable profession, but once I have done it all I lost a bit of enjoyment.

howlin2009: Ranged advys are bad aye, but there is nothing so stupid as a 3.2k AAD 4k NR 3.9k AR 1he+1hb enfo tbh.
Means: Ranged professions enjoy a significant advantage everywhere and more so against pet professions. (Even if it isn't true, whose opinion matters?)

I enjoy all my alts for different reasons. They all require a different mood from me respectively to enjoy.
Fixer has been favourite for the last year and a half approx. My only real pvp char atm. Pvm is leaving me cold tbh.

Hm, that's a good question. I'm not sure what profession I find most fun.
It used to be Enf back when I played one but I haven't played one for like 6 years so I don't know how I would feel about it now.
I like trader because a trader can do a little of everything. Mezz, heal, root, drain and such. At least combat isn't boring with so many options. It's a bit boring to do so little damage though.
Doc is fun for healing people. It's fun doing PvP without having to worry about being "teh master killer" or such. Just hanging back a bit and healing people is such a nice break from the normal combat that other professions offer.
Engie is fun at lower levels, when your pet is only restricted by what skill you can get and no by level locks.
Soldier, adv, MA and such are so bland in combat. Sure, they do good damage and/or defense and such but they don't have that special flavor that some other professions offer.

Enforcers.
Enforcers are held to a higher standard, whole raid groups hinge on how well a enforcer performs. A bad enforcer can waste hours of hard work, for 20 or more people with one single mistake. But a good enforcer is able to stop the dominos from falling in line, saving hours of /failed grind. We are expected to do more, lead better, and screw up less often then other professions. It can be a bit challenging sometimes, but it is nice once you learn how to do things. Makes helping other people easy, and fast. Makes the game more fun, IMO.

I've always enjoyed playing my engineer. Early on it's pretty boring, /pet hunt while doing homework, reading book, surfing porn. But at the same time you can solo very difficult things with relative ease. Later in the game you can start messing with tradeskills. Building crap becomes interesting, you start going to strange places you normally wouldn't just to build some random contraption you'd otherwise know nothing about. You wind up collecting random artifacts which will boost tskills or tools for crafting. Soon enough you'll have a couple of bags of tools and a couple bags of buff items. Your friends will always ask you to build things and spread the word to others that you can charge. You probably won't make back the money you spent on the tools, but it's still money!
Solo pvm isn't that great at endgame, but not impossible. You won't be soloing bigots or lotv but you can still have fun. I think people are starting to realize that engineers have a lot to bring to the table when it comes to teaming and instances. At least the smarter ones realize that engineers have huge damage dealing potential as well as team reflects (only 3% less than soldier!) and transportation.
In pvp the engineer has incredible survivability. Blockers and reflects make up for the lack of evades somewhat and coon is a nice panic button to get out of situations. If you get cornered by a lot of enemies you can hit motr/tacky hack and drop a snare mine as you make your break. Healing is a bit of a pita, having to rely on generic perks or regrowth's long lock. But pets... when they do hit... hit like a truck full of trucks. Couple that with an aimed shot weapon (bye frand D  and you're a force to be reckoned with.
Having played my engineer for nearly 7 years (holy crap!) I've started to get a little bored. I reset from tradeskills to pvp and back so many times. Get bored of one only to switch back to the other. But I've had a lot of fun over the years with my engi.

I might sound a bit boring here but I love playing Doc. I like to team and it's fun when you're the sole healer and making sure that everyone stays alive...despite someone accidentally pulling mobs onto the team, etc.
The survivability of docs also makes it fun and when you start being able to do some meaningful damage around TL 5, it really opens up a new facet to the profession IMO.

Imo .. shade is most fun  . Cool specials.. lots of dmg.. and it is different from other professions.
I used to play soldier which was quite fun sometimes.. but when i felt that am not good soloer on soldier it became boring.

Pet classes seem to always be my bread and butter when I play MMO's. I have been playing an enforcer and a MA since the start of this game. My enf was needed by my org so we could raid. The MA was the first toon I actually wanted to keep since I have this problem of deleting toons I don't have any need for.
That being said, my MA has always been my fave toon. Lately, since MA's have been neglected something awful, its only starting to be fun again.

Adventurer for me. I worked on damage and healing, so that I could tank or heal. It is fun when you solo, can calm them and if you fail that, kill them. Even better than enf if you don't manage to hold agg, "I have no taunts" though I always did okay, tanking second floor IS at 150 with a doc and trader to kill the fanatics is fun.
I also am so happy to have things like Calia Form: Parrot.

Hands-down, Neutral Nanomage Grenade Engineer.
Got some of the best team/raid DD around, tho pistol engi can OD me (pft, nbd tbh)
Can solo Inferno very well
able to tradeskill anything that could be made
damn good in PvP - forces the facerollers to /emoquit
as far as versatility goes, Engineer is a great all-around profession despite it's many short-comings, still-half-broken ancient toolset and other general problems.

All pet professions for me. I like the complexity of those professions. ATM i love my 190ish crat, having a deep red Tiig in a 220 hard inf mish as pet and spanking the hell out of the mobs, while having full crowd control with calms and short charm as a sub 200 is just fun :P Also the xp modifiers make leveling almost bearable.
MP is also alot of fun too, although its imo the weakest of the three pet professions (TL 7 spoken). When an AI gen hits teammates for 20 points of dmg with debuffs running is funny (esp when they think its a gimpy gen and they have super-duper ACs and reflect  )
Eng is nice for survivability and damage dealing... and tradeskilling oc.
Not talking about PvP here, because i just suck @ that
